It's easier to take all the organs out as one piece. Sever the larynx and esophagus, separate these from ligaments, arteries and veins. Then work your way down the spine since everything is pretty much connected to your spine it all comes out pretty easily. All the lower organs from the duodenum down are wrapped in two layers of this stuff called caul fat or in the medial world greater omentum. It's a confusing web of lies that's easy to get lost in, plus it's easier to take out intestine while they're still in their natural basket so to speak. Since this started while he was already half way through I'm assuming the internal examination is already done and the cause of death was already confirmed. A Y cut is also standard where the body will be viewed later and usually the rib cage removed. I worked at the coroners office in Toronto while in Ryerson pre-med, (never completed my training, not enough money, sleep or time). As I was only an assistant, I picked up the non-CUPPI bodies and help the coroner in any way he wanted including doing his laundry and picking up lunch and dinner. This guys can tear through 25 bodies in a shift sometimes and are surprisingly thorough.
BTW CUPPI stands for circumstances undertermined pending police investigation.
When's the last time you picked your nose with your elbow. A lot of coroners, (as if I really know as I've only met four) wear dish gloves or at least used to when I worked assistant. They also use garden sheeres and bolt cutters and some other crazy stuff including butcher knives and I've even seen a deer skinning hook knife.
